The first recipe I want to share with you is that of manga pachadi or mango chutney. This is very easy to prepare and keeps well in the fridge for about a week.
Ingredients
Semi ripe Totapuri mango (kilimooku manga) 3 nos
Coconut oil 2 tbsp
Red chillies 2-3 nos
Salt 1/2 tsp
Jaggery 1 cup
Curry leaves 4-5 nos
Mustard seeds 1 tsp
Fenugreek seeds 1/2 tsp
Asafoetida a pinch

Method
- Skin the mangoes (can leave the skin on which makes the cooking time longer) and slice into bite-sized pieces.
- Heat some coconut oil in a pan and splutter the mustard seeds, fenugreek seeds curry leaves and red chillies.
- Add the asafoetida and the chopped mangoes.
- Add the salt and cook till mango reaches jam-like consistency.
- Add the jaggery and stir well to incorporate it.
- Let the jaggery melt and cook till the oil separates.
- Let it cool and store in fridge.
- Can be served hot. Goes well with chapati,roti and bread as well as rice.
